Italian coffees are a genre into themselves. There are regional differences, but mostly the idea is to roast coffees until they’re brittle and produce a ton of solubles in the cup - not exactly a third wave style extraction. The resulting coffees seem to be more shelf stable with less acidity and significantly more base notes (bourbon, tobacco, leather, etc…). This Kimbo blend is kind of the perfect Italian/Neapolitan coffee. The roast fulfills the Italian profile without tasting stale, being oily, or resulting in a ton of broken beans (can result in an uneven extraction). These beans are easy to pull, and I tend to go with a longer extraction (1:2.5) to tame the taste of robusta. It’s slightly less punchy in milk than similar roasts, but significantly smoother, too. On its own, I’d recommend a demitasse of sweetener to balance the chocolatey bitterness, which results in a very easy to drink shot.
