My grandfather was from Calabria and migrated to a little town called Carbondale, Pennsylvania outside of Scranton. He and the neighbors started making their own and had their own smokehouse. Now just about all of the original sausage makers are left and I'm sad to say the tradition has died with them.

I have only cut the Soppressata Sweet and Hot. The taste is good. The texture was harder than I would have liked. By the pictures on the website it appeared the Soppressata texture was going to be softer.
