Chewy, mostly filled with nerves rather than meat. Looks like everybody is doing it lately , substituting nerves for meat.

Thi was one of the most authentic spicy Calabrese salami , oh my goodness, soo delicious!
I grew up in Italy, and we made homemade salami every year, I’ve missed that.
The only time I could get anything close to the homemade was when I go to visit my family in NY.
